GREEN TEA

 

Huang Shan Mao Feng is a unique green tea from Anhui Province near Huangshan, or yellow mountain, in China. It is an exquisite tasting tea and among the most famous teas in China.


Mao Feng means fur peak and it describes the shape and appearance of the processed tea leaves. They contain new unopened tea buds, with a preponderance of white hair, and a single leaf. The best teas are picked in the early spring before China's Qingming Festival.


The leaves are shaped in a hot wok by repeatedly lifting them, rolling them across the hands and dropping them. This creates a slightly pointed shape and the white hairs remain visible even when dried. The local tea farmers say the leaves resemble orchid buds.


Trying Huang Shan Mao Feng for the first time is a thrilling experience for green tea lovers. The long green leaves produce a pale liquor with a light floral aroma reminiscent of magnolia or orchid bloom. A clean and refreshing tea, it is light, mild, smooth and balanced, with no astringency and a mouth-watering finish. The flavour profile is vegetal and a little grassy, with a savoury undercurrent. The taste further develops with sweeter notes and light fruit flavours.
